Aloo Palak/ Potato with spinach

Aloo Palak is a wonderful vegetarian dish that combines the earthy flavours of baby potatoes with the nutritious goodness of spinach. It's a simple and wholesome dish, packed with flavourful spices . Perfect with some rotis. A wholesome nutritious meal
Ingredients For the potatoes:
500 grams of baby potatoes
Method
Peel the baby potatoes and bring them to a boil in water. Cook until soft and done, then set aside.

600 grams of spinach
Wash well and chop fine and set a side
4 medium size onions finely chopped
2 medium size of tomatoes finely chopped
3 green chillies finely chopped
Salt to taste
1 tablespoon dried Fenugreek leaves
1/4 cup water
15 grams cloves of garlic finely chopped
Ingredients/ spice powders
1 teaspoon of coriander powder
1/2 teaspoon of cumin powder
1/2 teaspoon of pepper powder
1/2 teaspoon of turmeric powder
1/2 teaspoon of garam masala powder
Method
1. Heat some oil in a pan. Sauté the finely chopped garlic until lightly browned. Add in the finely chopped onions and sauté until they turn lightly brown.
2. Mix in the tomatoes and green chillies and cook till soft and done. Add the boiled baby potatoes and mix well.
3. Stir in the coriander powder, cumin powder, pepper powder, turmeric powder, and garam masala powder. Add salt to taste and 1/4 cup of water. Let it cook for 2 minutes.
4. Add the dried fenugreek leaves (kasuri methi) and stir well. Finally, mix in the finely chopped spinach and cook until the spinach is done to your liking.
Serve with rotis .
