Today was in the mood for a Batata Vada , at the same time just don't like deep frying anything. As much as possible , try to shallow fry. So here is a recipe of a simple Batata Vada , instead of deep frying shallow fried it and called it 'Aloo Tikki' Made a slurry of Besan which I have lightly roasted ( Gram flour) and coat it with Panko Breadcrumbs to give that crunchy texture of a cutlet. Ingredients 600 gms potatoes boil , remove skin and mash few curry leaves 1 tsp chana dal soak in water for an hour ,pat dry 5 to 6 green chillies chopped finely or add green chillies according to taste 1/2 tsp turmeric powder 1 tsp coriander powder 1/4 tsp cumin powder 1/2 tsp pepper Powder sat to taste 1/2 tsp chaat masala 1/4 tsp hing 1/4 tsp mustard seeds 2 onions finely chopped 1/4 cup coriander leaves finely chopped 1/2 tsp finely chopped garlic cloves 1/2 tsp lime juice Ingredients 3/4 cup gram flour roast lightly ,then allow to cool and add water to make a thin batter/ slurry will a bit of salt and chilli powder. panko breadcrumbs or a mix of crushed cornflakes and breadcrumbs METHOD Heat up some oil ,add mustard seeds, channa dal and curry leaves. Once it starts to splutter add the finely chopped garlic , lightly stir fry. Add the finely chopped onions, green chillies and stir fry till translucent. Mix in the coriander powder, cumin powder, pepper powder,hing powder, chaat masala,salt to taste and turmeric powder. Add the mash potatoes and mix well. Remove and keep aside . Once cooled add the finely chopped coriander leaves and 1/2 tsp lime juice. Form into round cutlet shape , coat with the gram flour batter ,then coat with panko breadcrumbs. Shallow fry.
