Beetroot Salad

Crunchy and flavourful salad with a perfect balance of tanginess and spice. Ideal as a side dish or a light meal!
Ingredients:
2 medium-sized beetroots (boiled until slightly crunchy), chopped into cubes
½ cup black olives
¼ cup gherkins, chopped into cubes
2 tomatoes, chopped
2 onions, thinly sliced
2 green chillies, finely chopped
¼ teaspoon coarsely ground peppercorns
½ teaspoon chaat masala powder
¼ cup fresh coriander leaves, finely chopped
2 teaspoons of lime juice
Instructions:
1. Prepare the Ingredients: Boil the beetroots until they are slightly tender but still have a crunch. Let them cool and chop into bite-sized cubes.
Assemble the salad:
1. In a mixing bowl, combine the chopped beetroots, black olives, gherkins, tomatoes, onions, and green chillies.
Season the Salad:
1.Sprinkle coarsely ground pepper and chaat masala over the mixture.
2.Add the finely chopped green chillies
Add the Final Touch:
Add finely chopped coriander leaves.
Drizzle fresh lime juice over the salad and toss everything well to combine.
Transfer to a serving bowl and enjoy this vibrant, flavourful salad as a side dish or a light meal.
Tip: For extra freshness, refrigerate the salad for 10-15 minutes before serving!
