Bol De Coc

An east Indian cake made from semolina {fine Rawa} and fresh coconut. Deliciously tempting cake , perfect for Christmas, don't you feel so?



Ingredients1 Fine semolina 200 gms Fresh coconut 350 gms 4 eggs 250 gms butter 2 tsp Rose essence 300 gms sugar 2 cups rose water


Remove the flesh from the coconut and chopped into small pieces. Then grind with rose water. Separate the whites from the yolks Powder the sugar Whisk the eggs whites to stiff. (Add a pinch of salt to the egg whites and make stiff)

Method Using an electric beater, whisk the butter and sugar together on level 1. Then add the yolks and whisk again. Add the rose essence. Mix well. Now mix in the fresh coconut mixture, semolina and whisk again. Finally, add in the egg whites little by little and fold gently till well mixed.. Line a baking tray with parchment paper. Preheat oven to 200 degrees Bake till done Approximately 1 hour
