Brinjal and potato Vegetable

A Simple brinjal and fried potato vegetable with basic spices goes well with chapatis .




INGREDIENTS

400 gms big size brinjal ( slices)

400 gms big size potatoes ( wedges) and shallow fried

2 green chillies finely chopped

1 tbsp ginger garlic paste

300 gms finely chopped onions

250 gms sliced tomatoes

1 tbsp chilli powder or according to taste

1 tsp cumin powder

1/2 tsp amchur powder

1tsp garam masala powder

salt to taste

1/4 tsp hing or asafoetida

1/2 cup finely chopped coriander leaves




METHOD

Add some oil to the vessel. Once hot add the finely chopped onions and stir fry till light brown. Then add the sliced tomatoes and stir fry for few seconds. Now add the ginger garlic paste and the sliced brinjal pieces. Mix well . Add very little water and allow to cook. Then when

almost done add chilli powder, cumin powder, turmeric powder, asafoetida ,amchur powder , garam masala powder and salt to taste.

Mix well. Lastly add the fried potato wedges and 1/2 cup finely chopped coriander leaves.
