Ingredients
160 grams flour/ maida
2 tablespoons of cocoa powder
1 teaspoon of baking powder
Sift all the above together and keep aside
250 grams of dark compound chocolate CP 16
275 grams butter
200 grams of brown caster sugar or powdered brown sugar.
4 egg yolks
2 egg whites
1 whole egg
1/4 cup whisky
2 teaspoons of vanilla essence
1/4 teaspoon of flour for dusting
Method
Step 1
Using the double boiler method, melt the butter and chocolate together. (Double boiler method: Add water in a vessel that is smaller than the main vessel, place it on a burner. On top of this vessel, place a metal vessel or bowl that holds the ingredients you are cooking. The steam of the simmering water warms the contents of the vessel gently with indirect heat.)
Keep aside to cool
Step 2
Adding a pinch of salt , Whisk the egg whites using an electric hand beater. Once the white foam starts to appear add the brown caster sugar or / brown powder sugar in batches and whisk well but not to stiff peaks.
Step 3
In a separate bowl , add the egg yolks, 1 whole egg and whisk using a hand whisk. Add the melted butter chocolate mixture and mix well. Add 2 teaspoons of vanilla essence and 1/4 cup bourbon whisky.Now add the egg whites,sugar mixture and fold in gently, until well incorporated.
Step 4
Now add the sifted dry mixture ( flour,
Baking powder and cocoa powder) and mix well using the hand whisk.
Step 5
Line a Baking tray( 10 inch x 8 inch) with parchment paper. Pour this batter into the baking tray.
Step 6
Dust the choco chips or finely chopped bits of chocolate with flour . Sprinkle evenly and gently over the batter.
Step 7
Bake in a preheated oven at 150 degrees (OTG). Keep only the lower burner on. After 25 minutes, check if it's done. If required start the top burner.
Approximately takes 30 mins to bake.
