These cookies are made using flour, butter, egg , and sugar . Along with flour , have added ground almonds and dry cranberries. Dry cranberries can be replaced with raisins.
Ingredients
60 gms butter (soft butter)
150 gms plain flour
50 gms almonds grind to powder
1 egg
1/2 tsp Baking powder
1 tsp Vanilla essence
100 gms Caster sugar
100 gms dry Cranberries chop into 2 pieces
Method
Cream butter and sugar by using a hand whisk or electric hand mixer.
Add the egg and whisk again. Mix in the vanilla essence. Sift the baking powder , plain flour and ground almonds. Add this sifted mixture to the egg mixture.
Fold in the cranberries. Mix well. Brush a baking tray with oil. Using two teaspoons, scoop a portion of the batter and gently place it onto the tray.
Refrigerate for half hour. Preheat oven to 180 degrees .
Bake for 15 to 20 mins or till underside is brown.
You can use raisins instead if dried cranberries
