Chicken Cafreal is a preparation where the chicken is marinated in a green masala paste consisting of herbs and spices. It is a traditional Goan recipe , made in all Goan homes. Goes really well with some fries , Pulao or just some bread .
Ingredients for the Cafreal 800 gms Chicken thighs Clean and wash well , pat dry , Make two to three cuts on the chicken thighs.
Ingredients for the spice rub 1 tbsp coriander powder 1 tsp cumin powder 1 tsp pepper powder 1/2 tsp turmeric powder 2 tsp chili powder Salt to taste.
Method Add this spice rub to the. Chicken thighs and keep for half an hour.
For the green masala 100 gms coriander leaves with stem 1 tbsp ginger garlic paste 1 big size onion sliced 100 ml water
Method Grind the above to a smooth paste
To the marinated chicken add 2 tbsp white rum 1 tsp honey Along with the ground green paste. Marinate the chicken for at least 1 hour.
Method Shallow fry the chicken till done. Remove the fried chicken and keep aside. Add the leftover marinade along with some water and cook this marinade in the same used for frying the chicken. Once the masala is cooked , place the fried chicken back into the pan. Cook for 2 mins.
For the Tomato Rice Ingredients 2 cups of basmati rice Wash and soak well for 15 mins 3 tbsp ready to use pasta / pizza sauce ( Dr Otekars pasta and pizza sauce) 2 tomatoes finely chopped 1 tbsp dry mix herbs Hot water
Salt only if required 1/2 cup finely chopped coriander leaves
Method To a pan add 2 tbsp clarified butter. Saute the finely chopped tomatoes, cook till soft. Next add the pasta sauce and cook for a minute. Add in the dry herb mix and rice . Mix well. Add the hot water, approximately 1 inch above the rice . Add salt if required. Let it come to a boil. Then lower the flame, cook covered till done. Lastly add the finely chopped coriander leaves.
