Chicken Curry In Red Masala Served With East Indian Wedding Rice

A chicken curry cooked in a basic red masala ,consisting of dry red chillies and spices. The chicken curry is served with a traditional East Indian pulao called Wedding Rice. This Pulao is mostly served during festive seasons and Weddings.



Wedding Rice Ingredients 2 cups basmati rice 1/4 cup cashew nuts 1/4 cup raisins 1/2 cup onions 2 boiled eggs

Method Fry the onions till brown and keep aside Fry the raisins and cashews and keep aside fry in ghee

Next process In ghee add few cloves ,cinnamon add rice and stir fry for half a minute then add hot water 1/2 inch above rice ,salt to taste once rice is done garnish with fried onions, cashews and raisins top it with sliced boiled eggs

Chicken Curry Ingredients 600 gms Chicken pieces marinated in Little salt and 1/4 tsp turmeric powder Ingredients for the masala 4 Red kashmiri chillies 1 tbsp coriander seeds 1 tsp. cumin seeds 1 tsp pepper corns 1/2 tsp fennel seeds 1/4 tsp turmeric powder 1/4 tsp poppy seeds 1/4 tsp sesame seeds 1/4 tsp Fenugreek seeds 1 onion sliced 1 tbsp Ginger garlic paste Grind all the above ingredients with some amount of water to a fine paste

Ingredients 2 onions finely chopped 2 medium size tomatoes finely chopped 2 green chillies slit 1 big size potatoes chopped 1 tsp garam masala powder 1 or 2 tsp vinegar

Method Add oil and stir fry onions till lightly brown. Now add the chopped tomatoes and cook till soft. Once the tomatoes are done add the ground red masala and cook for a minute. Add the chicken pieces, green chillies and potatoes and just enough water . Allow to come to a boil. Add salt to taste Then cook on low flame till done. Once almost done add garam masala powder and vinegar.
