Chicken Wings with Stir-Fried Veggies and Creamy Guacamole

This Sunday, I treated my family to a flavourful and delicious meal of chicken wings, stir-fried veggies, and creamy guacamole. It was a perfect combination that everyone loved—a true comfort meal that brought joy to our table!


Chicken Wings Marination

Ingredients:

2 kilos chicken wings (around 25 pieces)

Clean and wash well, then pat dry.

For the Marinade:

2 teaspoon chili powder

1 teaspoon cumin powder

1 teaspoon pepper powder

1 teaspoon garam masala powder

2 tablespoons ginger-garlic paste

2 tablespoons dried oregano

2 tablespoons vinegar / apple cider vinegar

1 tablespoon oil


Method:

1. Marinate the chicken wings with the spice and herb mix.

2. Let it sit for an hour to absorb the flavours.

3. Shallow fry the marinated wings and set them aside.


Flavourful Sauce

Ingredients:

3 bunches of spring onions, finely chopped (bulbs and greens separated)

10 green chilies (or adjust to taste), slit

Barbeque sauce (approx. 1 ½ cups, adjust to taste)

2 teaspoon apple cider vinegar

8 cloves garlic, mashed or minced

Pepper powder (to taste)


Method:

1. In the same pan, add oil and sauté the spring onion bulbs, green chilies, and mashed garlic cloves until fragrant.

2. Add the barbeque sauce and ½ cup of warm water, allowing it to cook for a minute.

3. Toss in the fried wings, coating them well with the sauce.

4. Garnish with finely chopped spring onion greens.


Stir-Fried Veggies

Ingredients:

6 carrots, sliced

10 baby corn

2 teaspoon chili flakes

Pepper powder (to taste)

2 tablespoons butter

1 tablespoon oil

Salt (to taste)


Method:

1. Heat oil and butter in a pan, then sauté the carrots and baby corn until tender.

2. Sprinkle with chili flakes, pepper powder, and salt to taste.


Guacamole

Ingredients:

4 ripe avocados

2 medium size onions finely chopped

4 cloves of garlic finely chopped

1 large tomato finely chopped

salt and pepper to taste

1 tablespoon lime juice

1/2 tablespoon vinegar

1/4 cup finely chopped coriander leaves

1 tablespoon sliced jalapeno or green chillies


Method:

  1. Mash the 4 avocados well. Mix the finely chopped onions, finely chopped garlic , finely chopped tomatoes ,jalapenos or green chillies, and finely chopped coriander leaves.

  2. Add salt ,pepper , lime juice and vinegar. Mix well.



Serve the chicken wings with the stir-fried veggies and a generous side of guacamole.
