Chicken With East Indian Bottle Masala and spices

Chicken curry infused with East Indian bottle masala and spices. This curry is rich and flavourful . Pairs perfectly well with some rotis, rice bhakris, bread or rice.
Ingredients for the green masala
1/2 cup desiccated coconut or fresh coconut
20 grams of coriander leaves
5 green chillies
1 tablespoon dry Fenugreek leaves
1 1/2 teaspoon ginger garlic paste
1 sliced onions
12 cashew nuts
Ingredients to prepare the curry
2 onions finely chopped
1/2 tsp garam masala powder
1 1/2 tsp chilli powder
1/4 tsp cumin powder
1/4 tsp turmeric powder
1 tbsp East Indian bottle masala powder
1 cup water ( adjust as needed)
500 grams chicken pieces
Salt to taste
Method
In a blender combine coconut, coriander leaves, cashew nuts, green chillies, ginger garlic paste , dry Fenugreek leaves and sliced onions.
Grind into a paste using just enough water. Set aside.
Heat oil in a pan or vessel and sauté the chopped onions until they turn lightly brown.
Add the garam masala powder, chilli powder, cumin powder, turmeric powder and East Indian bottle masala powder sauté for a minute.
Pour in 1 cup of water and let it simmer.
Add the chicken and salt Stirring Cook for 2 minutes.
Stir in the prepared green masala paste and cook for another 2 minutes.
Add more water if needed and let the curry simmer until the chicken is Fully cooked
Adjust seasoning to taste.
