Ingredients
125 gms butter 125 gms sugar powdered 100 gms flour 50 gms desiccated coconut 1 tsp baking powder 2 eggs 1 tbsp cocoa powder 1 tsp vanilla essence 1/4 cup water
Method Melt the butter and powdered sugar together on low flame till butter melts stirring gently , set aside Sift the flour, baking powder and cocoa powder together. Add the desiccated coconut and mix well. Using a hand whisk , whisk the 2 eggs well , add the vanilla essence and mix well. Add the egg mixture and the melted butter mixture to the flour mix. Add 1/4 cup lukewarm water and mix well using a hand whisk.
Line a baking tray with parchment paper and bake in a preheated oven at 180 degrees. takes approximately 30 to 40 mins.
For the glaze mix in sifted 4 tbsp icing sugar, 2 tbsp sifted cocoa powder and very little lukewarm water mix to form a thick paste. spread this on the cake. sprinkle on the top with desiccated coconut.
