Corn And Bok Choy Fried Rice

A simple delicious vegetarian fried rice with chinese bok choy and sweet corn served with a quick and easy sauce to make.



INGREDIENTS 2 cups basmati rice ( half cooked) 3 green chillies finely chopped 1 sweet corn ( remove the kernels) 2 tsp fennel seeds 1 star anise powder the fennel and star anise ( dry grind) 1 tsp cinnamon powder 1 tbsp finely chopped garlic cloves 1 tsp finely chopped ginger salt to taste 2 bok choy washed well separate the leaves from the green stems. slice the green stems and keep aside. chop finely the green leaves and keep aside


METHOD

Add some amount of oil to your pan . Stir fry the finely chopped ginger garlic and green chillies till aroma arise on medium flame. Add the corn and stir fry on low flame for 1/2 a minute then add the gree stem parts of the bok choy and stir fry. Allow to Cook for a minute on low flame. Then add the ground fennel, star anise , cinnamon powder and salt to taste. Mix well , add the basmati rice and mix well on medium flame. once done toss in the green leaves of the bok choy and toss well . cook for another 1/2 minute.


FOR THE SAUCE

2 tbsp soy sauce 2 finely chopped green chillies or 1 2 tbsp finely chopped spring onions 1 tbsp vinegar 1/4 tsp sugar ( optional)

Serve with the fried rice.
