A Quick vegetarian meal. Paneer Gravy served with stir fry Sweet Corn and Jeera Rice. The Cottage cheese is marinated with spices and shallow fried.
For the gravy the tomatoes are pureed , the onions are stir fried along with cashew nuts , garlic and the pureed tomatoes. Spices and dried oregano are added.
Cottage cheese(Paneer )With Dried Oregano
Ingredients 1 500 gms Paneer cut into cubes Marinate with 1tsp chilli powder and 1 tsp pepper powder

Ingredients 2 2 onions sliced 400 gms Tomatoes sliced 2 tbsp dried oregano 6 garlic cloves 10 cashew nuts 1/4 tsp nutmeg 1/2 tsp chilli powder 1/2 tsp pepper powder
Method Stir fry the sliced onions lightly ,then add sliced tomatoes, cashew nuts and garlic cloves. Cook for 5 mins. on medium flame. Once cooled, grind to a paste adding very little amount of water.
Add some amount of oil, Then add the ground paste, dried oregano, chilli powder, pepper powder , nutmeg powder, little bit of sugar and salt to taste. (u can add chilli powder and pepper powder according to taste, adding a bit of sugar is optional). Allow it cook on medium flame for 2 mins. Lastly add the paneer and cook for another 10 to 15 mins.
FOR THE SWEET CORN Boil the Corn pieces with a little bit of salt. Remove and keep aside.
Add a tbsp of butter to a pan , finely chopped garlic (about 6 cloves of garlic), pepper powder, 1tsp mixed dried herbs (oregano, basil, parsely)
FOR THE JEERA RICE Ingredients 1 cup basmati rice 1/4 tsp cumin seeds less than 1/4 shahjeera {black cumin} 1stock cube 1/4 cup finely chopped coriander leaves Hot water
Method Add the cumin and shahjeeera once they start to splutter add the rice and stir fry . Add the stock cube and hot boiling water, 1/2 inch above the rice. Cook till done. Lastly add the finely chopped coriander leaves.
