Ingredients
125 gms plain flour
1 tsp baking powder
Mix all the above and sift and keep aside
100 gms whole dates (deseed) chopped fine
60 gms walnuts chopped and powdered
2eggs separate the yolks from the whites
whisk egg whites with a pinch of salt to stiff.
125 gms fine Brown sugar
125 gms unsalted butter
1/2 cup water
1/2 cup brandy or Rum
1 tsp vanilla essence
Method
Cream the butter , add the egg yolks one at a time and whisk together. whisk with a hand electric mixer on level 1 . Add the sugar and whisk again. Add vanilla essence and 1/2 cup brandy or Rum and whisk . Add the sifted flour ,and baking powder mixture a tbsp at a time and mix well with a spatula.
Add the ground walnuts to the batter And mix well with a spatula . Add 1/2 cup water and whisk again. Whisk the egg whites to stiff. Fold in the egg white mixture little by little. Fold well.so it is well incorporated into the batter.
Dust the chopped dates with a tsp of flour .Sift it . Fold the dates into the batter.
Pour this batter to the baking dish which is lined with baking paper . Sprinkle on top few chopped dates and walnuts dusted with flour, and sifted .bake at 180 degrees till done
Takes approximately 30 to 40 mins to bake

Poke the cake gently with toothpick all around. brush the warm cake with Brandy 2 to 3 times
