Dry Bombay Duck Chili Fry 2

Ingredients

12 Dried Bombay Ducks

Cleaned well. And cut into medium size pieces. Soak in water for 15 mins. Drain and remove excess water.

Marinate in 1/2 chili powder 1/4 tsp cumin powder and 1/2 tsp ginger garlic paste.

3 big onions sliced

1 green chilli finely chopped

A handful of chopped coriander leaves


1 tsp Vindaloo spice powder or add

1 tsp chilli powder

1/2 tsp cumin powder

1/4 tsp turmeric powder

1 tsp ginger garlic paste

Method

Stir fry the sliced onions for a minute in little oil. Add the chopped green chillies and stir fry.

Add now the dried Bombay duck pieces.

Mix well .and cook on low flame for a minute. Add a tsp of vindaloo spice powder or the spices mentioned. Stir fry .

Add a tsp of ginger and garlic paste. A little water about 2 tbsp. Stir fry and cook on low flame for 2 minutes.

Lasting add the coriander leaves, 1/2 tsp coconut toddy vinegar or any vinegar or lemon juice.

Salt if required.





VINDALOO MASALA POWDER

This masala is good for frying king fish steaks, bombay ducks , frying chicken and for pork chops

Ingredients

200gms red Kashmiri chilies

60 gms cumin

3 inch turmeric

Method

Sun dry the chilies, cumin and turmeric for 3 days. The chilies should turn absolutely crisp.

Then remove the stems of the chillies.

Dry roast each ingredient. Cool . Then powder it fine


FOR FISH FRY /CHICKEN FRY /PORK CHOPS

add the VINDALOO powder with ginger garlic paste ,vinegar and salt.
