Today's Father's Day brings back special memories of my dad. Other than being a wonderful, loving father, he was a talented cook , filling our lives with love and delicious meals.
I can still vividly recall the mouthwatering aromas that would fill our home as he prepared his signature dishes From his cuddi curries, meatballs frithad curry, beef lonvas with radish, carrot, turnip, and potatoes, green masala beef steak curry, crabs, Vindaloo, sarapatel, Gol fish curry, Nivti fish curry (mudskipper), kolimb, sukka jawala, sukka bombil batat, and the list goes on. The memories of his delicious meals and his love always remain with me.
I cherish these beautiful memories forever .
Sukka bombil chilli fry
Sukka bombil fry is a delightful and flavourful East Indian recipe. This recipe is a wonderful blend of spices and ingredients . The addition of East Indian bottle masala adds a lovely aroma and flavour too.
Ingredients
25 sukka bombil / dry bombay ducks
1/4 cup greens of spring onion finely chopped
1 tbsp coriander leaves finely chopped
2 teaspoons East Indian bottle masala powder
3 onions finely chopped
1 tomato finely chopped
2 green chillies finely chopped
1 teaspoon of coriander powder
1/4 teaspoon of cumin powder
1/4 teaspoon of turmeric powder
Salt if required
1/4 teaspoon dry amchur powder / dry mango powder
Method
For the dry bombay ducks
Clean and cut into pieces. Soak in hot water for half an hour. Wash it well and keep aside.
Method
Heat up some oil in a pan, once hot , sauté the finely chopped onions until they turn translucent. Add the finely chopped green chillies, finely chopped curry leaves, the dry bombay duck pieces and stir fry. Allow to cook on low flame for a minute.
Add in the coriander powder, cumin powder , turmeric powder, East Indian Bottle masala powder and mix well. Add salt to taste and 1 cup water. Allow to cook on low flame for 2 minutes.
Add in the finely chopped greens of the spring onion , finely chopped coriander leaves , finely chopped tomatoes and dry mango powder. Cook till done.
