Cuddi curry is a traditional East Indian Curry with ground coconut paste and East Indian Bottle Masala. Here I have roasted the desiccated coconut , and stir fried the green chillies and onions .
A slight twist to this curry by adding dried fenugreek leaves.
Ingredients
500 gms chicken pieces Marinate chicken with little turmeric powder ,salt and pepper powder.
For the masala 2 medium size green chillies 1 big size onion sliced 1/2 tsp garam masala 1/4 tsp turmeric powder 2 tbsp desiccated coconut 1 tbsp ginger garlic paste
Heat up some oil in a pan . Stir fry the onions and green chillies till onions are lightly browned . Add in the desiccated coconut and stir fry .lastly add in the garam masala and turmeric powder. Once it cools down grind with some amount of water and a bit of tamarind.
2 and 1/2 tbsp East Indian bottle masala or 2 tbsp (according to taste)
Ingredients 2 2 medium size onions finely chopped 1 tomato pureed 1/4 cup finely chopped coriander leaves Salt to taste
Method
Heat up some oil in a vessel. Stir fry the finely chopped onions till brown. Add in the ground masala with some amount of water and allow this masala to cook . Then add the East Indian bottle masala and stir fry well. Add now the tomato puree and some amount of water if required. Cook for a minute. Lastly add in the chicken pieces and cook till done. Adjust seasoning and add in the finely chopped coriander leaves.
Cauliflower vegetable
500 gms Cauliflower vegetable 2 tbsp Kasuri methi /fenugreek leaves Few garlic cloves 2 to 3 green chillies finely chopped Salt , pepper according to taste 1/4 tsp turmeric powder 1/2 tsp lime juice 1 tomato finely chopped
Method
Heat up a some oil. Add the garlic cloves finely chopped and stir fry lightly. add the finely chopped tomatoes and green chillies. Mix well.and cook till tomatoes are soft Add the salt, pepper and to turmeric powder. Add in the chopped Cauliflower
And cook till almost done. lastly add the kasuri methi/ fenugreek leaves and. Lemon juice.
