Spices lightly roasted and a small amount of copra or desicated roasted to make this masala Here is a recipe with Chicken
Chicken Frithad (East Indian Cuisine) 4 Red kashmiri chillies 3 cloves 2 cardamom 1 inch cinnamon 1/4 tsp turmeric powder 1/2 tsp cumin seeds 1/4 tsp poppy seeds 1/4 tsp sesame seeds 6 garlic cloves 1 onion
Dry roast the above ingredients lightly
1/2 cup desicated coconut dry roast the coconut 1 onion of medium size sliced fried till lightly browned.
Grind the above to a paste adding just enough water.
Ingredients 2 500 gms chicken marinate the chicken with 1/2 tsp chilli powder 1/4 tsp turmeric powder salt to taste
keep for half hour
2 onions sliced 1 tomato sliced 2 green chillies slit
salt to taste oil 1/4 cup coriander leaves finely chopped
Method Add some oil ,once hot add the onions and stir fry till lightly browned. Next add the sliced tomatoes and stir fry , mix in the chicken pieces and stir fry for a minute on low flame. Add the ground masala, slit green chillies and just enough water. Allow the curry to come to a boil, Lower the flame. Add salt to taste. Once done add finely chopped coriander leaves.
