Fried Chicken with Kidney Beans Curry

A Flavour-Packed Meal

fried chicken paired with a creamy, comforting kidney beans curry.


Fried Chicken

Ingredients:

800g chicken drumsticks, cleaned and washed

4-5 red Thai or green chillies

1 tbsp coriander seeds

1 tsp cumin seeds

½ tsp fennel seeds

Dry roast the above spices

1 onion, sliced and lightly sautéed

1 lemongrass bulb

1 inch galangal, chopped

½ tsp turmeric powder

½ tsp pepper powder

2 tsp ginger garlic paste


Marination:

Grind the chillies, coriander seeds, cumin, fennel, onion, lemongrass, galangal, turmeric, pepper, and ginger garlic paste into a smooth paste. Rub this paste onto the chicken drumsticks with salt to taste. Set aside to marinate.


Ingredients 2:

 2 Inch galangal

6 lime leaves

1/2 a lemon grass

bulb

Few basil leaves

1 bell pepper chopped into small cubes , which is optional

3 red Thai chillies

1 medium size onion chopped


Method:

1. Shallow fry the marinated chicken drumsticks until golden brown. Set aside.

2. In the same pan, cook the leftover marinade for a minute.

3. Add 3 Thai chillies, a chopped onion, 6 lime leaves, ½ lemongrass bulb, and 2 inches of sliced galangal. Stir well.

4. Add optional bell peppers and the fried chicken. Toss everything together.

5. Finish by adding chopped basil leaves.


Kidney Beans Curry


Ingredients:

250g kidney beans (soaked for 8 hours and pressure-cooked , 5 whistles on high flame)

1 tsp coriander powder

½ tsp cumin powder

½ tsp pepper powder

½ tsp garam masala

½ tsp turmeric powder

1 tbsp dry mixed herbs

Few curry leaves

4 mashed garlic cloves

3 chillies (green or red)

2 onions, finely chopped

2 tomatoes, sliced

200 ml coconut milk


Method:

1. Sauté garlic, chillies, and curry leaves in oil.

2. Add onions and sauté until golden brown.

3. Stir in tomatoes and cook until soft.

4. Add spice powders, dry herb mix, and a crumbled stock cube.

5. Pour in 1 cup of water, then add the cooked kidney beans. Cook for 2 minutes.

6. Finally, add coconut milk and simmer for another 5 minutes.

 fried chicken served alongside a rich and creamy kidney bean curry for a hearty meal!
