Fried Chicken with Pulao and Raita – A Family Favourite

This Fried Chicken with Pulao and Raita is a household favourite. The crispy, well-marinated fried chicken, fragrant pulao infused with spices, and cooling raita make for a delightful combination that satisfies every craving.
Fried Chicken
Ingredients for Marination:
3 or 4 green chillies
40 grams of coriander leaves
Grind to a paste with very little water and set aside.
Spices:
½ tsp turmeric powder
½ tsp chaat masala powder
½–1 tsp chilli powder
2 tbsp Shaandar Biryani Masala powder
1 tbsp dry fenugreek leaves
2 tsp ginger garlic paste
2 tbsp curd
1 tsp brown sugar (optional)
Chicken:
1.25 kg chicken (breast and leg pieces or only leg pieces)
Method:
1. Combine the ground green paste with all the spices—turmeric, chilli powder, chaat masala, biryani masala powder—along with the dry fenugreek leaves and curd.
2. Mix well, adding brown sugar if desired.
3. Coat the chicken pieces in the marinade, ensuring they are well covered. Set aside to marinate.
Pulao
Ingredients:
3 cups of Pulao basmati rice (washed and soaked for 15 minutes, then drained)
2 tbsp dry fenugreek leaves
2 onions, sliced
•Salt to taste
Whole Spices:
2 black cardamom pods
½ inch cinnamon stick
6 cloves
1 tsp cumin seeds
1 bay leaf
Spice Powders:
1 tsp turmeric powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp garam masala powder
Method:
1. Heat clarified butter in a pan, then add the whole spices.
2. Sauté the onions with a pinch of salt until golden brown.
3. Add the spice powders and ½ cup water, stirring well.
4. Mix in the dry fenugreek leaves, followed by the drained rice. Stir gently.
5. Add hot water, ensuring it covers the rice by ½ inch.
6. Cook until the rice is fluffy and done.
Raita
Ingredients:
400 grams whisked curd
1 finely chopped onion
1 finely chopped tomato
2 green chillies, chopped
Chaat masala, chilli powder, salt, sugar, and pepper powder to taste
Fresh coriander leaves, finely chopped (for garnish)
Method:
1. In a bowl, whisk the curd until smooth.
2. Mix in the chopped onion, tomato, and green chillies.
3. Season with chaat masala, chilli powder, salt, sugar, and pepper powder.
4. Garnish with freshly chopped coriander leaves.
Fried chicken:
Add just enough oil in a pan . Shallow fry the chicken pieces till done to perfection.
