Temperade Masala is an East Indian Masala consisting of green chilies, garlic, ginger, coriander seeds, cumin seeds , cardamom and cinnamon.
For the Fried Mackerel
Ingredients 4 Makerels clean and wash well, make slits on both sides. Add a mix of turmeric and salt to te fish .Keep for 10 mins. Wash it off and pat dry.
Temperade masala 4 or 5 green chilli 5 garlic cloves 1inch ginger 1 onion sliced 2 tbsp coriander seeds 1tsp cumin seeds 2 cardamom 1 inch cinnamon 1/2 tsp raw rice 1/4 tsp Turmeric powder little tamarind 1/4 cup coconut fenny 1 tsp vinegar 1/4 cup desiccated coconut
Method
Dry Roast the coriander seeds, cumin seeds, cardamom, cinnamon, rice. Dry roast desiccated coconut
Add Little oil and stir fry the onions, garlic, green chilies and ginger. once cooled ,grind all the above with coconut feny, vinegar and tamarind. If required add Little water to help grind.
Add some oil to the pan and stir fry the masala for 2 mins on low flame. Allow to cool. Then fill the slits of the fish with this masala and shallow fry.
