Goan Pork Sorpotel

Goan Sorpotel is of Portuguese origin ,cooked by Goans and also by the East Indians. Though the East Indian version is very different from Goan Sorpotel.The Pork meat is parboiled and also the Pork liver which is boiled too. It is then diced and sauted first in its pork fat itself. Then cooked in its spicy vinegary masala.



Ingredients 5 Kashmiri chilies 1 tsp cumin seeds 1/2tsp pepper corns 2 inch cinnamon stick 4 cloves 10 cloves of garlic 1/4cup vinegar 1/4tsp turmeric Grind all the above to a paste 5 chillies sliced finely 8 cloves garlic cut finely 1 inch ginger cut finely

Pork 1kg 200 gms pork liver Wash pork well and pat dry . Pressure cook liver in 1 whistle Pressure cook pork 2 whistle Once cooled Chop into small cubes . Keeping fat separately , meat and liver separately . Fry fat first. Remove and keep aside. In the same pan fry the meat pieces remove and keep aside. Then fry liver and keep aside In the same remaining pork fat /oil ,if needed add oil stir fry few curry leaves , finely sliced ginger garlic and green chilli Then add 2 medium size onions finely chopped .when slightly brown add the ground paste and some water and allow the paste to cook. Add the pork pieces and mix well.add salt as required. Cook till done. Before putting the gas off add 1/4cup cashew fenni and a tbsp vinegar. Cook for 5 mins . Switch gas off
