Kaju Katli

Kaju Katli also known a Kaju barfi. An Indian sweet prepared with cashew nuts , sugar and to give it a nice aroma , cardamom powder.


Ingredients

1 and 1/2 cups cashew nuts. Powder the cashew nuts and keep aside 1 cup sugar 1/2cup water 1/4 tsp cardamom powder

Grease a parchment paper with very little oil And keep aside


Method add 1/2cup water to the pan and then add sugar to the 1/2cup water. Allow to heat on low flame till sugar completely dissolves and starts boiling Then add the cashewnut powder and mix well. Stir the mixture continuously on low flame Once it starts thickening add the 1tbsp and a tsp of ghee and keep stirring. Allow to cook continuously stirring till it starts leaving the sides of the pan. Add this mixture on the parchment paper and spread evenly using a rolling pin with a another parchment paper on top of the mixture at half centimeter thickness. Dust it with edible gold glitter and cut into diamond shape.
