A very basic East Indian masala which is lightly roasted .This is a masala which is with or without copra
For the Chicken Mince Frithad , I haven't used copra /dry coconut.
This masala goes well with Chicken/ mutton
Served with Pulao
Chicken Mince with Frithad Masala
10 kashmiri chilies
1 tbsp coriander seeds
1 tsp cumin seeds
1/2 tsp turmeric powder
1 inch cinnamon stick
3 cardamom
8 cloves
1/2 tsp sesame seeds
1/2 tsp poppy seeds
1 tsp pepper corns
Dry roast the above mentioned spices of ingredients 1
Ingredients 2
1 onion sliced , stir fry the onions till lightly brown
Ingredients 3
1 tbsp ginger garlic paste
Grind ingredients 1, 2 and 3 together with enough water to a paste
Ingredients 4
4 onions finely chopped
4 tomatoes finely chopped
1 kilo chicken Mince
1 tsp apple cider vinegar or any other vinegar
Method
Add oil and fry the onions till brown. Now add the tomatoes and cook till soft. Once the tomatoes are soft and almost done add the mince and fry the mince.
Add now the ground masala and mix well.
Add salt to taste and 1cup water.
Cook on medium flame.
Lastly add 1/4 cup finely chopped coriander leaves.
