A mix of cauliflower, peas, potatoes and Corn , lightly spiced to be served with Chapatis for lunch
Mix Vegetable Stir fry
Ingredients
500 gms cauliflower
Remove the florets , soak in salt and turmeric powder for 15 mins.
Wash well and keep dry
200 gms peas
3 potatoes chopped
2 corn, remove the kernels
3 green chillies finely chopped
6 cloves of garlic mashed
1 tbsp coriander leaves finely chopped
1/2 tsp turmeric powder
1/2 tsp pepper powder
1/2 tsp coriander powder
1/4 tsp garam masala powder
Salt to taste
1 tbsp dried Fenugreek leaves
2 tomatoes sliced
Method
Heat 2 tbsp ghee ,add. Salt to it. Shallow fry potatoes till done and keep aside. In the same pan saute the mashed garlic cloves lightly. Saute next the sliced tomatoes, add next the finely chopped green chillies. Stir fry for 1/2 a minute. Then add the green peas , stir fry for a minute.
Add next the chopped cauliflower and stir fry. Add the corn kernels. Mix in the coriander, pepper and turmeric powder. Stir fry well. Next add the fried potatoes and mix well. Add the dried Fenugreek leaves and allow to cook.
Once the vegetables are done add in finely chopped coriander leaves and garam masala powder.
Lastly add salt as per taste.
