Mutton Curry Served with Pulao and Raita

Mutton curry is cooked with a medley of aromatic spices, tender mutton absorbs the rich flavours, creating a dish that is both hearty and satisfying. This mutton curry is paired with pulao, cooling raita, and crispy papad , a comforting family meal.
Ingredients for the Ground Masala
8 dry Kashmiri red chillies
1 tsp cumin seeds
1/2 tsp peppercorns
1/2 tsp fennel seeds
1/2 tsp sesame seeds
1/2 tsp poppy seeds
1/4 tsp fenugreek seeds
1 black cardamom pod
1-inch cinnamon stick
4 cloves
1 bay leaf
Preparation:
1. Roast the above spices and dry chillies until aromatic. Set aside.
2. Add:
20 grams of coriander leaves
1 tbsp dry fenugreek leaves
Small ball of tamarind
1 tbsp ginger garlic paste
1 medium onion, sliced
1/2 tsp turmeric powder
1. Heat a small amount of oil in a pan and stir-fry the onions until lightly browned.
2. Now grind all the above roasted spices,dry chillies, ginger garlic paste, turmeric powder,dry Fenugreek leaves, coriander leaves, stir fried onions and just enough water to make a smooth paste .
For the Curry:
1.2 kg mutton pieces
1/2 tsp turmeric powder
Salt to taste
1 tbsp vinegar
3 finely chopped onions
3 finely chopped tomatoes
3 finely chopped green chillies
Clarified butter (ghee) for cooking
Water as required
2 potatoes (optional)
Preparation:
1. Wash the mutton thoroughly. Marinate with turmeric powder, salt, and vinegar for 30 minutes. Wash again and set aside.
2. In a pressure cooker, heat some clarified butter and sauté the finely chopped onions until golden brown.
3. Add the chopped tomatoes and cook until soft.
4. Stir in the ground masala paste and cook for 2 minutes.
5. Add the mutton pieces and cook for another 2 minutes, stirring occasionally.
6. Pour in just enough water and bring to a boil. After the first whistle, reduce the flame and cook for 8 minutes.
7. Once the steam is released, add the potatoes and cook for another 2-3 whistles or until done to your liking.
8. Adjust salt to taste.
Serving Suggestion:
Serve the mutton curry hot with aromatic pulao or rice bhakris, refreshing raita, and crispy papad for a wholesome and satisfying meal.
