Xacuti is a coconut base curry , pronounced as ' shagoti ' . This is a curry prepared in Goa , India with spices that include dry chilies, poppy seeds, coriander seeds , pepper corn etc. These spices are roasted along with coconut giving it that fantastic flavour and taste.
Ingredients
500 gms Mutton cleaned washed well
Grind to a paste the below mentioned ingredients
2 green chilies
1 onion lightly fried
1 tsp ginger garlic paste
1/2 tsp chili powder
1/2 tsp pepper powder
marinate the mutton with this paste ,salt to taste.
keep for an hour.
Ingredients for the xacuti masala
4 kashmiri chilies
1 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp pepper corn
1/2 tsp fennel seeds
1/4 tsp Fenugreek seeds
1/4 tsp poppy seeds
1/4 tsp sesame seeds
1/2 inch cinnamon
3 cloves
1 bay leaf
1/2 cup desiccated coconut or fresh coconut
Dry roast the above mentioned ingredients lightly.
1 onion lightly fried
1/4 tsp nutmeg powder
1/4 tsp turmeric powder
1 tsp Ginger garlic paste
Small ball of tamarind
Grind all the above ingredients together using just enough water.
Ingredients
2 onions Finely chopped
Method
Pressure cook the marinated mutton with just enough water on high first whistle then low for 10 mins.
Add some oil to a vessel, once hot stir fry the finely chopped onions till lightly brown.
Add the ground masala and some of the water of the cooked mutton.
Bring to a boil. Add the mutton and salt if required.
Cook for another 10 mins on medium flame.
