Pork curry with basic Thai ingredients like lemon grass, basil , galanga and lime leaves. The Pork is slow cooked along with the ground masala till done and lastly coconut milk is added.
Ingredients
500 gms pork pieces
For the curry paste
8 Kashmiri chillies
1 tsp corriander seeds
1 tsp pepper corns
1 tsp cumin seeds
6 cloves
3 cardamom
1 inch cinnamon
10 cloves of garlic
1/2 inch turmeric
2 cm galangal
1 lemon grass bulb
1 small ball of tamarind
1 star anise
Grind with one onion and some water to a paste
Method
2 Sliced onions
1 bulb of lemon grass
Heat up oil in a vessel. Stir fry 2 sliced onions till light brown.
Add the pork pieces and stir fry. Then add the ground paste and mix well
Add some water and a bulb of lemon grass. Let it come to a boil .then lower the gas and slow cook .Once the pork pieces are done add 50 gms coconut powder in 1/2cup of lukewarm water for thick coconut milk.
Add this coconut milk to the curry. Add 6 to 8 basil leaves.and 4 lime leaves. Cook for another 10 to 15 minutes.
