Pork Indad

The boneless Pork pieces are marinated, fried and cooked with the ground masala . It consist of a thick gravy , a recipe worth trying out. This Pork Indad is served with a lovely Jeera [cumin ] Rice. Lovely memories of this wonderful Pork Indad , my grandmother would often make this for our Church feast ,served with sannas or Neer Dosa . Being a Mix of Mangalorean and East Indian is actually a bonus , you get to enjoy both the cuisine.



Ingredients 1

For the Masala

12 deseed Kashmiri chilies

2 1/2 inch cinnamon

10 cloves

1tbsp cumin seeds

1/4 tsp turmeric powder

1/2 tsp mustard seeds

1/2tsp fennel seeds

small piece of tamarind

1tsp sugar

2 medium size onion

1/2 tsp peppercorn

1/3 cup vinegar

12 to 15 cloves of garlic depending on the size

1/2 cup lukewarm water

1 inch ginger.

mix all the above ingredients together and keep for half hour.

grind all the above with just enough water to s paste.


Ingredients 2

1 kilo boneless pork

Washed well. Add salt, Turmeric powder and keep for 20 mins. Wash well again and pat dry.


Marinate the pork with

1tsp ginger garlic paste

1tsp chili powder

1/2 tsp cumin powder

1/2 tsp pepper powder

1l2 tsp garam masala powder


Method

Add a tsp of oil to the vessel. Add the marinated pork pieces and stir fry for a minute.

Then add the ground masala and mix well.

Add just enough water.

Allow to come to a boil

Then lower the flame and cook till the pork is done.

Adjust salt to taste.


For the Jeera rice /cumin rice

Ingredients

2 1 /2 cups rice washed well and soaked for 15 mins.

few cumin seeds

few shahjira / black cumin seeds

1/4 cup finely chopped coriander leaves

salt to taste

1 onion big size sliced.


Heat up 2 tbsp ghee . Add the cumin seeds and shahjira .

Stir fry the sliced onions till lightly browned.

Add the well drained rice. and stir fry.

then add the hot water just 1/2 inch above the rice.

salt to taste . When it comes to a boil . lower the flame and cook till done and water is completely absorbed.

Lastly add the finely chopped coriander leaves.

mix well.





Pork Indad ia a Mangalorean Pork dish. {For 700 gms boneless pork } It consist of Pork pieces are seared well then the masala is added and cooked to make a thick gravy. Ingredients 700 gms boneless pork pieces Method First wash the pork pieces well. Then add 1 tsp and a 1/4 tsp of salt and 1 tsp of vinegar and keep for half hour. Then rinse off very well with water and pat dry. For the marination 1/2 tsp ginger garlic paste 1/2 tsp chilli powder 1/4 tsp cumin powder 1/4 tsp pepper powder 1/4 tsp garam masala powder Mix these powdered spices , ginger garlic paste to the pork pieces and keep aside for an half hour. For the masala 8 kashmiri chillies 1 inch cinnamon 6 cloves 1 tsp cumin 1/4 tsp mustard seeds 1/4 tsp fennel seeds 1/2 tsp pepper corn 1 onion 1/2 tsp sugar Small piece of tamarind 1 tbsp ginger garlic paste 1/4 lukewarm water 1/4 tsp turmeric powder 1/4 cup vinegar Method Soak the spices and chillies in lukewarm water and vinegar along with ginger garlic paste. Keep the onions aside. After half hour grind above to a paste along with the onions . Ingredients 1 tsp vinegar Salt to your liking In a vessel heat up some oil, add the pork pieces and fry lightly. Then add the ground masala , mix well. Add just enough water. Once it comes to a boil, lower the flame and cook till almost done, check for salt. Add if required and cook till done. Lastly add 1 tsp of vinegar. See less
