Potato and Corn vegetable with just basic spices , served with two types of chutney and puris.
INGREDIENTS
1/2 kilo potatoes chopped into cubes
1 Corn on a cob
Mustard seeds
1 tsp Coriander powder
1/2 tsp cumin powder
1/2 tsp pepper powder
Salt to taste
Few curry leaves
4 medium size onions sliced
3 green chillies finely chopped
1 small bowl of corriander leaves
METHOD
For the bagar add some curry leaves and few mustard seeds.
Once it starts to splutter add the sliced onions . Cook till translucent. Then add the finely chopped green chillies Stir fry.
Add the turmeric,corriander,cumin and pepper powder.
Stir fry well.add the chopped potatoes and mix well. Cook on low flame till almost done.
Add the corn kernels and finely chopped coriander leaves. Stir fry. And cook till done.
FOR THE CHUTNEY 1
2 cups dessicated coconut
3 to 4 green chillies
1 cup coriander leaves
1 tsp ginger garlic paste
Salt to taste
1/2 tsp sugar
1 tsp lemon juice
Blend all together
FOR THE CHUTNEY 2
2 Cups dessicated coconut
3 green chillis
1/2 tsp ginger garlic paste
Salt to taste
1/2 tsp sugar
1/2 tsp lemon juice
Blend all together
Make a tadka of some channa dal and 1 red dry chilli and little oil
Pour this over the chutney
