Red spinach / Amaranth leaves with radish

A delightful, healthy, and flavourful Red Spinach with Radish making it perfect for a comforting meal. Quick to prepare and pairs perfectly with chapatis for a wholesome meal


Ingredients

30 grams garlic cloves finely chopped

500 grams lal maath / amaranth leaves or red spinach washed well and chopped

400 gram radish thinly sliced into rounds

5 to 6 green chillies finely chopped

1/2 teaspoon pepper powder

1/2 teaspoon turmeric powder

1/4 teaspoon amchur powder / dry mango powder

Salt to taste

3 onions finely chopped

2 tomatoes finely chopped

Method:

1. Heat oil in a pan, then add the chopped garlic and sauté until lightly browned.

2. Add the chopped onions and sauté until lightly browned. Stir in the green chillies.

3. Mix in the chopped tomatoes and cook for 2 minutes on medium heat.

4. Add the radish slices and stir fry for 2 minutes. Season with salt, turmeric, amchur, and pepper powder. Cook on low flame, stirring occasionally.

5. Finally, add the chopped red spinach and cook until done to your liking.

Serve hot with chapatis
