Sambhar with Fried King Fish and Mango Salad
Sambhar Ingredients:
5 cloves garlic, peeled and sliced
2 green tomatoes, sliced
10 to 15 curry leaves
2 dry red chilies
½ teaspoon mustard seeds
½ teaspoon cumin seeds
Quick Sambhar Powder:
1 tablespoon coriander powder
1 tablespoon chili powder
½ teaspoon cumin powder
½ teaspoon pepper powder
½ teaspoon turmeric powder
½ teaspoon asafoetida powder
Additional Ingredients:
250 grams tuvar dal (pigeon peas)
Soak tuvar dal for 3 hours, wash well, and boil until done. Set aside.
A medium-sized ball of tamarind
Soak in hot water and set aside.
Method:
1. Heat oil in a vessel. Add sliced garlic and sauté until lightly browned. Add cumin seeds and mustard seeds. Once they splutter, add curry leaves and dry red chilies.
2. Stir in the sliced green tomatoes and cook for a few minutes.
3. Add the sambhar powder mix (coriander powder, cumin powder, pepper powder, turmeric powder, chili powder, and asafoetida) .
4. Pour in ¼ cup water, some tamarind pulp (as per taste), and mix well. Bring the mixture to a boil.
5. Add the cooked dal, mix well, and adjust the consistency by adding water if needed. Add salt to taste.
6. Cook for 10 minutes, then add finely chopped coriander leaves and continue cooking for another 10-15 minutes.

Fried King Fish Ingredients:
12 king fish slices
Marination:
1 tablespoon chili powder
1 teaspoon cumin powder
½ teaspoon turmeric powder
½ teaspoon pepper powder
½ teaspoon garam masala powder
Salt to taste
1 tablespoon ginger garlic paste
2 tablespoons coconut toddy vinegar or as per your liking.
Method:
1. Mix the marination ingredients well and set aside.
2. Coat the fish slices and fish roe with the prepared masala.
3. Coat the marinated fish with a mix of rice flour and semolina.
4. Shallow fry the fish slices until golden and crispy.

Mango Salad Ingredients:
2 bottle mangoes, peeled and thinly sliced
2 onions, thinly sliced
Dressing:
1 teaspoon powdered sugar
Red chili flakes
Pepper powder
Salt to taste
Finely chopped coriander leaves
Method:
1. Mix the dressing ingredients well.
2. Toss the sliced mango and onions with the dressing.
3. Mango salad is ready to serve.
Serving Suggestion: Serve the hot sambhar with fried king fish, mango salad, and steamed rice for a delicious, wholesome meal.
