Spicy Tomato Egg Nest


Bursting with the vibrant flavors of ripe tomatoes, aromatic spices, and creamy eggs nestled in a bed of rich tomato sauce, this dish promises to awaken your taste buds . Ingredients


- 350 grams tomatoes, pureed


- 4 to 5 tablespoons ready-to-serve pizza/pasta sauce (e.g., Dr. Otekare Pizza and Pasta Sauce)


Spice powder:


- 1 teaspoon chili powder


- 1 teaspoon coriander powder


- 1/4 teaspoon pepper powder


- 1/2 teaspoon turmeric powder


- 1/2 teaspoon garam masala powder


- 2 teaspoons mixed dry herbs


- 1 teaspoon dry basil


- 6 capsicum rings (optional)


- 6 eggs


- 5 cloves garlic, mashed


- 1 tablespoon butter


- 3 tablespoons oil



Method


1. Heat oil and butter in a pan. Add mashed garlic and sauté lightly.


2. Pour in the tomato puree and let it cook.


3. Add ginger-garlic paste, mixed dry herbs, and dry basil. Mix well.


4. Incorporate chili powder, coriander powder, pepper powder, turmeric powder, and garam masala powder. Stir well.


5. Pour in 400 ml of water and cook for 2 minutes over medium heat.


6. Add the ready tomato base pizza/pasta sauce and mix thoroughly. Add salt if needed. Cook for an additional 2 minutes.


7. Gently crack the eggs into the pan, one at a time. Optionally, place a capsicum ring over each egg.


8. Sprinkle dry basil over the eggs. Cook until the eggs are done to your liking. Serve hot.
