Popti Curry actually consist of vegetables like val papri, potatoes , carrot and raw banana , sweet potato ,brinjals and green peas. To make it according to my kids taste, I have replaced some of these vegetables . For this recipe I have just used three types of veggies.
Popti Masala is basically a masala that has coconut, green chillies , ginger ,garlic that are ground together and then East Indian Bottle Masala is added to this curry.
INGREDIENTS
100 gms carrot chopped
100 gms French beans chopped roughly
100 gms potatoes chopped roughly
Boil the vegetables with a little bit of salt cook till almost done. Keep aside . Reserve the water in which the vegetables were boiled.
1/2 cup dessicated coconut
Roast the coconut till light brown
2 medium size onions sliced
2 green chilli
Stir fry in oil the sliced onions and chopped green chillies.
1 tbsp ginger garlic paste
1/4 tsp turmeric powder
Grind to paste the roasted dessicated coconut, sliced onions,green chillies, turmeric and garlic ginger paste along with a small amount of tamarind and enough water to assist grinding.
1 tomato sliced
2 tbsp ghee.
2 tsp bottle masala
12 to 15 curry leaves
METHOD
Add ghee to a vessel. Heat up.once hot add the sliced tomatoes and curry leaves.
Stir fry till tomatoes are soft.
Mix in the ground masala with some amount of the reserved boiled vegetable water and 2 tsp of bottle masala.
Allow to cook for a minute .
Now add the cooked vegetables . Add salt to taste accordingly..
