Updated: Nov 27, 2023

Stew's are comfort food , total satisfying indeed. Its perfect when you want something light and yet tasty . This is a very simple and basic Stew recipe with coconut milk. I have served this Stew with Neer Dosa . Stew are also best served with a simple plain pulao, toasted bread , Appams or Neer Dosas.

Here I have added mix veggies of peas, french beans and carrot, pairing it with celery and bulbs of the spring onion. The only spice added is pepper and green chilies.

Ingredients 6 bulbs onions ( bulbs of the spring onion only) 6 cloves garlic finely chopped 1/2 Inch ginger finely chopped 5 green chilies slit 1 and 1/2 tsp coarsely ground pepper corn 1 Chicken stock cube 200 ml coconut milk 2 stalk celery 1 bay leaf

1 carrot chopped 1/4 cup greens peas 1 cup chopped french beans

Method Add oil to a vessel ,once hot add 1 bay leaf. Then add the finely chopped ginger garlic and Finely chopped celery stir fry till lightly browned. Then add the whole onions and stir fry . Add the vegetabls and stir fry on low flame , cook for a minute ,then add the stock cube and 1 cup water. Allow to come to a boil on medium flame. Add the slit green chillies and coarsely ground peppercorn.

After 1 minute add the coconut milk cook for 2 mins.

For the neer dosa 3 cups any raw rice

Soak for 3 hours

Grind to paste with 3 tbsp desiccated coconut or fresh coconut which is optional. Add some amount of water.

Then once ground add another 4 cups water gradually ,checking the consistency . The consistency should be runny but at the same time not too much.

Use an onion, cut of the top . Poke a fork into flat side of the onion.

Use a non stick pan or cast iron pan.

Add some oil to a bowl, dip the onion into this oil and brush the pan. Using a ladle add some of the batter to the pan , swirling nice and round . Allow to cook on medium flame.

Continue the same with the rest of the batter.
